Armadillo Eggs

Smokey bacon wrapped goodness with a kick!

Ingredient Amount
Jalepenos 8 peppers
Ground Beef 2 lbs
Ground Sausage 1 lbs
Finely Shredded Cheddar Cheese 1/2 cup
Finely Shredded Mozzarella Cheese 1/2 cup
Ricotta Cheese 1/2 cup
Onion Powder 1 Tbsp
Garlic Powder 1 Tbsp
Chipotle Tabasco 3 oz
Paprika 2 tsp
Bacon 2 lbs
BBQ Sauce 2 cups
  1. Prepare smoker at 250 degrees with your choice of wood pellets or chips
  2. Remove the tops of the Jalepenos and remove seeds
  3. In a large bowl, mix the Ground Beef and Ground Sausage
  4. Mix spices and Tabasco into meat mixture
  5. In a seperate bowl mix Cheddar, Mozzarella, and Ricotta Cheese
  6. Fill Jalepenos with Cheese Mixture
  7. Cover stuffed Jalepenos with meat mixture
  8. Wrap Jalepenos with Bacon
  9. Place Eggs in smoker
  10. Cook until internal temperature reaches 165 degrees. Remove Eggs
  11. Increase smoker temperature to 400 degrees
  12. Brush Eggs with BBQ Sauce
  13. Return Eggs to smoker for 5 minutes
  14. Remove Eggs from smoker and serve
